Vegan Mini Pizza Tacos

Last weekend I decided to try out a new recipe. I am always on the hunt for recipes the kids will enjoy and eat up in a hurry. This recipe certainly made the cut! The kids, including hubby, loved this recipe. It was certainly one that we will enjoy time and time again. I wasn’t sure how it would turn out and I’ve never been a huge fan of pizza sauce but these were great.

The recipe was simple and it didn’t take long to make! Gather up a few supplies and you are on your way to a quick dinner. While I didn’t take photos along the way of preparing it (it was my first time and I didn’t even know if it would turn out), I did get photos of the after and I did jot down my ingredients, times and temperatures as well as instructions along the way.. Since this recipe is rather simple I think that it will be pretty easy to duplicate without photos along the way. Now this recipe IS Vegan. Here’s what you will need (if you cannot find these exact brand, just use the Vegan brand in your store of these products):

  • 10″ Flour Tortillas (I used about 8 of them for my recipe but you can double the batch or use less)
  • 1/2 cup melted Earth Balance Olive Oil Buttery Spread
  • 1 1/2 Teaspoon Garlic Powder
  • 1 1/2 Teaspoon Oregano
  • 1 – 15.5 Ounce Jar Enricos All Natural Pizza Sauce (you will have some left over)
  • 1 – 4.2 Ounce Package Yves Veggie Pepperoni
  • 1 – 8 Ounce Package Daiya Mozzarella Style Shreds
  • Circle Cookie Cutter
  • Muffin Tin
  • Cake Pan

Start out my laying the tortilla shells flat. One by one use the cookie cutter (or another round object) and cutting 5 circles out of each. You want to cut around the outside in a circle shape. You should get 4-5 out of each tortilla. Then go ahead and cut your pepperoni up. You’ll cut each circle up into quarters. Then you can go ahead and melt your butter. Once it’s melted mix in the garlic powder and the oregano. Stir that well. You want to prepare your oven and preheat it to 400 degrees F (200 degrees C). You are going to then place your tortillas in the butter mix a few at a time. After you dip them you are going to place them on an upside down muffin tin like so:

You will bake them at 400 degrees F (200 degree C) for 6-7 minutes. Watch them and take them out sooner if needed. I think I left mine in a little longer for the 2nd batch because the shells were still a bit soft. You want them to be crunchy. When you take them out let them cool for 2-3 minutes. Once they are cool remove them from the muffin tin and begin filling them. I did make a double batch so I still had a batch in the oven while I was filling these. Add a layer of pizza sauce, a layer of cheese and some pepperoni. Put each completed “Pizza Taco” in the cake pan. Once you have them all completed you can put the cake pan in the oven and bake the whole thing for 6-8 minutes at 400 degrees F (200 degrees C). When they come out of the oven they will be very HOT and very delicious!! Here’s what you will have ready to eat:

Ingredients

Instructions
  1. Lay the tortillas flat.
  2. Cut out circles with a circle cookie cutter. Each tortilla should have 4-5 circles.
  3. Cut the pepperoni into quarters.
  4. Melt the butter. Add Garlic Powder & Oregano & Stir.
  5. Preheat oven to 400 Degrees F (200 Degrees C)
  6. Coat the tortilla circles with the butter mixture.
  7. Put the tortillas on an upside down muffin tin and bake for 6-7 minutes.
  8. Allow to cool for 2-3 minutes.
  9. Fill with pizza sauce, mozzarella shreds and pepperoni and put them in cake pan.
  10. Bake for 6-8 minutes.
  11. Serve!
