Peanut Butter Oreo Stacks

I have ALWAYS been a sweet tooth junkie. In fact I think that most of my high school life I lived on junk. Everything was in a bag, box, container or came from McDonald’s (our open campus lunch didn’t give us many choices until after we could drive). I never worried about it because at 5 foot 9 inches I weighed 130 pounds dripping wet. I ate whatever I wanted and never gained a pound (why can’t this be the case now!). Now two kids later I am heavier then I really want to be and actively losing weight. For the most part I am clean eating and doing well, but that’s no fun to talk about! Let’s get to it!

Now somewhere inside me there is that child that wants to divulge on cookies, cakes, brownies and cupcakes. So..  I’d seen a recipe for some cookie/brownie things and I thought it was genius. Of course it wasn’t my favorite cookies and didn’t contain peanut butter. If I am baking in my house 8 out of 10 times there is peanut butter (and chocolate) involved. There is no way around it. They are the favorites of my family and no matter what happens, I end up adding one of both of them to my creation. In this case I added both! Score!

You will need a few supplies:

  • Your favorite Peanut Butter
  • Oreos
  • Brownie Mix
  • Cupcake Liners

To get started you are going to take 2 Oreos and sandwich them with peanut butter. Then add a little peanut butter to the top just to make sure we have the peanut butter area covered.

Yup! That’s the look we are going for. I also used double stuffed Oreos because we can’t get enough of that creamy filling either. You can do all of your cookies with the peanut butter inside and set them aside or you can set them right inside your cupcake pan (in a liner – don’t skip the liner, you won’t get them out of the pan).

With one package of Oreos I was able to make 12 of these delicious treats. There will be a handful of Oreos left, but you will probably need those to nibble on when baking. Since this really only makes 12 treats, plan to double up if you need more of them. Prepare your brownie mix according to the directions on the package. It really doesn’t matter what type of brownie mix you use. I used Double Fudge Brownie Mix. Preheat your oven (according to your brownie mix).

Go ahead and use a tablespoon to cover the tops of your Oreo sandwiches. It will fall over the sides on it own so don’t worry too much about trying to spread it out. One box of Brownie Mix covered the 12 of these. So again, plan to double up if you need more of them. I make sure they are all covered and then I go back and fill in with whatever brownie mix is left so that they are covered well. Pop these in the oven and cook them according to the brownie mix package. Mine said 20-24 minutes for pan brownies. I cooked these about 16 minutes. You want to cut back the time just a bit. Check to make sure your brownie area is cooked through. Once that happens they are done. The peanut butter gets soft pretty quick so you won’t have to worry about the rest of the dessert.

After the brownie is cooked, pop them out of the oven. These can be served cooled down or enjoy them warm after the oven! I promise you they will go fast. My family of 4 ate them all for dessert that same night I made them. Since we eat clean and typically don’t indulge in this fashion.. But hey, sometimes we just have to live a little, right?

And there you have it. A treat that is delicious and mouth watering. It’s quick to make, about 15 minutes prep time and about 15-20 minutes cook time. They are perfect for a summer treat, classroom treat or anytime dessert. Here’s a printable version for you to tuck away:

Ingredients
  • I Package Oreos
  • Peanut Butter

Instructions
  1. Put a layer of peanut butter on an Oreo.
  2. Add another Oreo to the top and top that one with peanut butter also.
  3. Place in a cupcake liner.
  4. Repeat with 12 more.
  5. Top with Brownie Mix.
  6. Bake as directed on Brownie Mix Box.
